FISH and chips is considered by many to be Britain’s national dish and is a favourite in many households.

However, insiders at Poppies, a well-known London chain of fish and chip shops, have revealed the secrets behind the counter.

The chain is named after founder Pat “Pops” Newland, who started cutting up newspapers for takeout orders at age 11.

Although the fish and chip shop now serves thousands of customers through branches in London, including Soho, Spitalfields, Camden and Notting Hill, there is one dish that they would not quickly order themselves.

A worker told Express.co.uk:”It would have to be jellied eels. They have been a popular dish since the 18th century and many of our customers love them, but if you are new to the dish, it can be quite a demanding bite.

“We serve them in the traditional way: cold, cut into pieces, boiled and covered with a spiced broth that solidifies around the pieces of eel and forms a jelly.”

The Poppies team revealed that their best-selling dish is undoubtedly cod and chips, with 70 percent of Londoners preferring cod over other fish.

The most popular side dish is mushy peas.

The team said: “Curry sauce is more popular with our customers than gravy, but the most popular side dish is always the mushy peas.”

And the time of day doesn’t matter, because they are performed ‘all day long’.

The employee shared: “A lot of fish and chip shops use frozen fish fillets, which I think a lot of people don’t realize.

“The fillets come from far away and can be frozen for a long time before they end up on your plate. That is one of the main points on which Poppies distinguishes itself.

“We only use fresh fish, sustainably and responsibly caught from the waters around Peterhead in Scotland.

“Every day we receive the fresh catch, our skilled fishmongers fillet and prepare the portions, then they are dipped in batter and prepared to order for our customers.”

In total, Poppies peels 13 tons of potatoes every week and makes 40,000 portions of chips.
