'He was enthusiastic to include in new ideas for the restaurant and felt proud to be part of their team and family.
“He also followed a university course of which he excelled in studying light vehicle mechanics.
'Nothing was too much for Simon, he would do everything to help someone, and anyone who knew Simon would describe him as funny, loving and caring.

Inspector Steph Arrowssmith, of the serious collision investigation team of the force, said earlier: 'Unfortunately, three teenagers died and one remains in the hospital with life -changing injuries in this tragic incident and our thoughts are with everyone who has been affected.
'We continue to perform questions about the collision and I would like to thank everyone who has contacted us with information to help with our research.
'We are still an appeal to someone else who has been on Offoxey Road on Friday evening to get in touch.
'We also want to hear from everyone who traveled through Bishops Wood and Brewood around 11 p.m., because we believe that the Audi traveled past Port Lane and Kiddemore Green Road for the incident.
'We believe that the Audi rode together with a red Vauxhall Corsa and a black VW wave.
“The vehicles were in no way involved in the collision, but we hope that motorists in the area may remember that they have seen the three vehicles together.”
A spokeswoman for West Midlands ambulance service said at the time: 'Upon arrival, ambulance personnel discovered four passengers of the car, all male.
“We thought the first man was provided by bystanders on the spot. He had sustained life -threatening injuries.
'Unfortunately it became clear that nothing could be done to save him and he was confirmed on the spot.
'Another three male patients from the car were assessed and life -threatening injuries had sustained. They received advanced trauma care from ambulance personnel on the spot.
“Two were transferred to the Royal Stoke Hospital for further treatment and the third was transferred to the Queen Elizabeth Hospital in Birmingham.”
