A qualified nutritionist has shared the ultimate chicken pot pie recipe, perfect for winter — and it’s filled with delicious veggies and bone broth.

Jordan Pie, who lives in New Zealand, shared a video on Instagram detailing the ingredients and process behind her nutritious recipe.

Ingredients needed for the dough are: 1 cup cassava flour⁣⁣⁣⁣⁣⁣⁣⁣⁣⁣, 100 g salted butter, cubed, 4 tbsp ice water⁣⁣⁣⁣⁣⁣⁣⁣⁣⁣, 1 beaten egg (for washing Eggs) .

For the filling you need: 700 g chicken thigh , 2 carrots , 1 leek , 4 celery stalks ⁣⁣⁣⁣⁣⁣⁣⁣⁣⁣, 6-8 cloves of garlic, 4 bay leaves⁣⁣⁣⁣⁣⁣⁣⁣⁣⁣, 2 tbsp curry bone stock, 1 cup liquid vegetable or chicken stock⁣⁣⁣⁣⁣ ⁣⁣⁣⁣ ⁣, 2-3 stalks of fresh thyme.

First, Jordan cut 700g chicken thigh into cubes and mixed in 6-8 crushed garlic cloves and let it sit in a bowl.

Then she finely chopped the carrots, leek and celery and fried the vegetables in ghee until they softened and took on some color.

On the next step, she added the vegetables to a bowl before sprinkling more ghee on the pan and frying the chicken and garlic for a few minutes.

Jordan added 2 tbsp of the bone broth along with the bay leaves, thyme, and vegetables, then mixed them all together and let it simmer.

In another pan, Jordan poured the liquid stock and 1 tablespoon of manioc flour and whisked the mixture together before simmering for 10-15 minutes or until it had thickened and thickened.

Then she put the mixture in the frying pan with the filling and preheated her oven to 180C.

Then she put all the dough ingredients in a food processor, blended them together and evenly rolled out the dough between two pieces of parchment paper.

Jordan then transferred the chicken and vegetable mixture to an ovenproof dish and gently turned the pie onto the filling, pressing it gently until there were no more air bubbles.

For the final step, Jordan covered the dough with egg wash and poked a few holes in the top before baking the dish for about 30-40 minutes.

How to make a Chicken Pot Pie

INGREDIENTS

Pastry:

  • 1 cup cassava flour
  • 100 g cold, salted butter, cubed
  • 4 tbsp ice water⁣⁣⁣⁣⁣⁣⁣⁣⁣⁣
  • 1 egg, beaten (for egg washing)⁣⁣⁣⁣⁣⁣⁣⁣⁣

Filling:⁣⁣⁣⁣⁣⁣⁣⁣⁣

  • 700 g chicken thigh
  • 2 carrots
  • 1 leek⁣⁣⁣⁣⁣⁣⁣⁣⁣⁣
  • 4 stalks celery
  • 6-8 cloves garlic, crushed⁣⁣⁣⁣⁣⁣⁣⁣⁣⁣
  • 4 bay leaves⁣⁣⁣⁣⁣⁣⁣⁣⁣⁣
  • 2 tbsp curry bone broth
  • 1 cup liquid vegetable or chicken stock⁣⁣⁣⁣⁣⁣⁣⁣⁣⁣
  • 1 tbsp cassava flour⁣⁣⁣⁣⁣⁣⁣⁣⁣⁣
  • 2-3 stalks fresh thyme⁣⁣⁣⁣⁣⁣⁣⁣⁣⁣
  • Ghee for cooking⁣⁣⁣⁣⁣⁣⁣⁣⁣⁣

METHOD

  1. Cut the chicken into cubes and put in a bowl and mix with the garlic and let stand while you prepare the vegetables
  2. Finely chop the carrot, leek and celery
  3. Saute vegetables in ghee until soft and starting to get some color, then remove from pan and set aside
  4. Add more ghee to the casserole and add the chicken and fry for a few minutes
  5. Then add 2 tbsp of the bone broth and add the bay leaves, thyme and vegetables, stir and let it simmer
  6. In a small saucepan add the liquid stock and 1 tbsp cassava flour and stir
  7. Simmer for 10-15 minutes to reduce and thicken
  8. Now pour it into the frying pan with the filling
  9. Preheat the oven to 180C
  10. Add all dough ingredients to a food processor and blend or pulse until ingredients come together
  11. Remove the mixture from the food processor and roll it out evenly between two pieces of baking paper⁣⁣⁣⁣⁣⁣⁣⁣⁣⁣
  12. Place the chicken and vegetable mixture in an ovenproof dish.⁣⁣⁣⁣⁣⁣⁣⁣⁣⁣
  13. Carefully turn the dough over the filling and the shell. Gently press it with your hands
  14. Cover the dough with egg wash and poke a few holes in the top of the dough
  15. Bake for about 30-40 minutes, or until dark golden brown and fully cooked
