The LA-based Australian has picked up one tip from American chefs that he insists on: brining the turkey.

“It’s still a fairly new concept in Australia, but a brine is essentially a bath that you submerge the turkey in overnight before cooking it,” he said.

“It allows the spices to penetrate deeper into the protein, but it also retains the moisture in the turkey.”

Additionally, Curtis suggests preparing salads just before serving and making sure the leaves are bone dry.
