WHY not try flipping the script on Pancake Day?
When you've had enough of the traditional treats, use the leftover mixture to make an even batter for later in the week.
Here are some ideas.
SAY FREEZING: Pour the batter into a large ice cube tray or small storage containers to quickly make individual pancakes.
When you want to use them, put the frozen portions in the pan with some butter over low heat.
The mixture thaws and cooks and you will have breakfast pancakes in minutes.
MUFFIN LIKE: Pour the remaining batter into greased muffin tins and bake in the oven until golden brown.
These pancake muffins are perfect for a quick breakfast on the go or as a tasty snack.
Add chocolate drops, nuts or dried fruit to make it even tastier.
ERASE OUT: Turn the excess batter into vegetable fritters for a quick snack or side dish tonight.
Buy a pack of frozen vegetables from Sainsbury's Stamford Street Co, 99 cents, and fry until soft in a pan.
Let it cool, mix it with the batter and season with salt and pepper in a bowl.
Heat the pan with a dash of oil and add the mixture spoon by spoon; this amount should yield one fritter.
As a finishing touch, grate some cheese over it.
SLICE 'N' EASY: Pour the remaining batter into a shallow, greased ovenproof dish.
Then randomly drop blueberries onto the surface of the mixture.

Cook in the oven over low heat for 20 minutes until done.
Once cool, sprinkle with icing sugar or sugar and serve sliced for tonight's pudding.
WAFFLE TIME: Use the batter to make fluffy breakfast waffles in a waffle maker – they're now reduced from £15 to £10 at Asda.
The crispy outside and soft inside of the waffles make them a delicious variation on traditional pancakes.
Serve them with your favorite toppings such as fresh fruit or yogurt.
